As minimum wages continue to increase with the national target being set at $15 per hour operators look for alternate methods to offset those cost. New equipment capable of streamlining BOH operations has vaulted to the front of the line as most operations have a majority of the labor dollars tied up in BOH operations.
Newer brands have taken the lead in this charge while more mature brands are taking a more cautious approach so as not to upset the delicate balance within their operations.
