Sweet Pea’s located in Greenwich Connecticut has been in operation for several years, Pilot Light was asked to review ALL aspects of the current guest experience.  After completing our 3-day evaluation we presented our findings to ownership (Rafael Pita), Mr. Pita requested Pilot Light implement our findings to enhance the existing guest experience.

BRAND POSITIONING…Ownership has decided to open additional locations, Pilot Light worked with ownership to determine the best path forward regarding the guest experience, i.e., full service, quick service, counter service.  It was determined to best create a point of separation from competition to maintain a full-service experience for their guest.

HIRING…Pilot Light was asked to hire and train a General Manager for the current location; we interviewed a significant number of candidates and presented our top 15 candidates to ownership.  Once the new GM was on board Pilot Light constructed a detailed training outline and worked hand in hand with the new GM during his 12 weeks of training.

TRAINING…. Understanding the Brand Position moving forward Pilot Light constructed and assisted management in implementing a detailed training program to enhance the guest experience. All staff members participated in the training program which was focused on service, food and beverage offerings and building a “team” environment.

MENU POSITIONING…In preparation for new openings Pilot Light reviewed ALL current food and beverage offerings, moving forward in conjunction with ownership Pilot Light will ensure all menu offerings meet the expectations of their guest in new markets.

SITE REVIEW…Pilot Light was asked to evaluate potential NEW location sites to ensure they meet the requirements of the targeted guest profile.
