Our team worked with ownership to define menu offerings for this start up concept, once defined, our culinary team crafted a menu to meet the needs of the local market.   The Pilot Light team conducted menu tastings with ownership, achieving targeted results.

The Pilot Light training team crafted a training outline to ensure ALL staff was knowledgeable and proficient in all aspects of the menu offerings.  Once training was completed PLH documented all final recipes and crafted order guides (with associated vendors) for all menu items. All kitchen standard operating procedures (SOP) were created and documented, including proper use of equipment and daily sanitation standards.

GENERAL MANAGER PLACMENT

Pilot Light lead and conducted an extensive search for a General Manager of both locations, receiving over 700 applications we interviewed over 150 candidates and presented the top candidates to ownership.  A GM was recently hired, and Pilot Light crafted a detailed training outline and is leading in the training of the new GM.
